Hello Friday, we meet again!

Summer is so close I can taste it!  After I work today I am on standby until FCAT scores come in.  We are expecting them late next week, or early the following week!  I can not wait to see how the kids did...I've got a feeling they rocked it!  After that we can really start scheduling...next school year is taking shape!!!  Soooo, I'll put in about 2-3 days and then have off until the end of July!  At least that is the plan....last summer didn't go that way at all!  High five for summer vacation...ish!  
This is what my past week looked like...
1.  Remember I said I was obsessed with Baby Girl's crib bumper?!?  I go into the nursery at least three times a day to stare at it.  It's just so perfect, it was exactly what I had in mind!  Now I am onto "operation crib skirt".  Wish me luck!
2.  This is my favorite top coat....and there is nothing like breaking in a fresh new bottle of it!
3.  Since my fingers are swollen (just a tad), I had to stop wearing my wedding rings a while back....I finally feel like a married lady again thanks to this cheapie set that I found at "Claire's".  So far my fingers haven't turned green!  High five indeed! (PS -loving my colorful nails!)
4.  THIS salad that I had on Wednesday is so delicious....I always wonder why I don't make it more often.
5.  So my office has been a disaster and EVERYTHING has been collecting dust for longer than I'd like to admit!  We have some kiddos hanging around (because their parents work at the school), and they have been working hard!  Thanks to Gracie for doing an amazing job making my bookcase look so pretty!!!  The rest of my office is looking pretty fabulous too!  I'm ready for a fresh start!  :)

Erin @ Read, Eat, Create - {Guest Post}

Thank you so much for having me Stephanie! I'm so happy to be here :)

Hello Never the Same Spice Twice readers! I'm taking over Stephanie's space today and it's an honor to be here! I absolutely love her blog and the recipes on here are just too good to pass up! That baby of hers must be in HEAVEN! I'm Erin and I blog over at Read, Eat, Create. Lately I've been linking up with another blogger for a #BlogEveryDayInMay challenge but once May is over I will be getting back to my regular postings. Recipes, weekend recaps, book reviews, and a little about my life! I've been on a new health kick lately too (you can read about that here if you feel so inclined) so motivation from internet friends has been keeping me in check too! Which brings me to the real reason I'm here today...

Ever since I've been trying to do this whole eating healthy, I allow myself one cheat day. On those days though, I don't want to indulge in cookies and cupcakes galore because I'm still trying to maintain a goal. Instead I've been devouring these cinnamon almonds. I'm sure they have the same amount of sugar in them as a cupcake but the almond part sounds so healthy it's hard to resist these puppies!
Here's how to rock it...

Ingredients:
1 1/2 Cups Sugar
1 1/2 Cups Brown Sugar
3 Tablespoons Cinnamon
1/8 teaspoon Salt
1 Egg White
2 teaspoons vanilla
3 1/2 Cups Almonds
1/4 Cups Water

Directions:
1. In a medium sized bowl, mix together sugars, cinnamon, and salt. Set aside.
2. In another medium sized bowl, whisk the egg white and vanilla until it gets frothy. Add almonds. Almonds should be thoroughly coated in the egg white mixture.
3. Add cinnamon mixture to the almonds and toss until coated.
4. Spray your crockpot with Pam. Add the almond mixture and turn it to low.
5. Cook 3-4 hours stirring every 20 minutes. I would recommend only 3 hours as you don't want it to get overcooked.
6. In the last hour of cooking, add the 1/4 cup water and stir well. This will make the coating crunchy.
7. Make sure you stir well so that all the almonds and mixture are mixed with water.
8. Once they are done, lay our parchment paper and spread almonds on here to cool. Break up almonds so there are no big clumps and try not to eat them all in one sitting once they have cooled!!

25 Week Bumpdate

We are still the size of an eggplant this week...and if I had to guess, I would say she is a large one!  TWENTY FIVE weeks....WOW!  We are getting up there!
Changes I've noticed:  Still at 18 pounds, which is good considering I've been packing them on this past month!  My doctor told me to watch out for carbs, so I am doing just that!  Last night my riceless stir fry was delicious...okay no... I totally missed the rice, I'm pretty sure I had dreams about it last night...all for baby though!

How I've been feeling:  Tired (what else is new), and uncomfortable....the usual.  I've been overheating, I'm not normally one to complain about the heat!  It is going to be a longggggg summer!  :)

How I've been sleeping:  Pretty good, I bought one of those pregnancy wedge pillows (just what I need...another pillow).  It traps me in a little bit since I also use a body pillow.  I still like it though, especially to use when I'm laying on the couch.   

Food and exercise:  On Sunday I walk/jogged 1.5 miles, and on Monday I did the elliptical for 2 miles!  It feels good to officially start going back to the gym.  It is about 30 yards away, so there really is no excuse.  I'm trying to ease back into it....I hope to go about 4 times per week as soon as summer vacay starts.  As far as food goes....well, the carb thing...wish me luck! 

Maternity clothes:  Loving my new maternity shorts, they are ridiculously comfortable.  I don't think they look half bad either....
Movement:  I'll let you see for yourself....
Best moment this past week:  Putting the crib together!!!!  Awwww, I love the furniture!  It is all so perfect!

What's cooking this week?

Let's not forget what this day is really all about....
Are you all doing anything to celebrate, or did you do that already yesterday?
We are planning for another low-key day, and that is fine by me! 

Hubby and I have been in nursery mode...we assembled the crib, and I've been drooling over the bumper.  It's starting to come together!  I keep finding Stephen standing in there admiring the furniture saying things like "we did good babe"!  It's just too cute, he is going to be the best Dad!  

Speaking of Baby Girl, she has been squirming around like a wild little lady in there!  I'll talk about it more in my next bumpdate, but let me just say that I no longer have a hard time getting Stephen to feel her kicking, AND I even captured it in a few videos!  Very cool!

Like I said, we have a very mellow day planned...starting with an early trip to the pool before it gets crowded for the afternoon.

Sweet Tomato Salad

Gooooooood Saturday Morning!
I am seriously WIDE awake, the sun is shining, and I'm ready to get this day started!  Last night, the week caught up to me and around 6:00, I fell asleep for 4 hours on the recliner...not comfortable.  Luckily, I went right into bed and was able to fall asleep pretty quickly.  Needless to say, I was up EARLY!  My mind is spinning with all of the things I want to accomplish during this 3 day weekend!  

First I want to share my easy recipe for this yummy tomato salad!  If any of you need something to bring to a BBQ this weekend...this is surely going to be a crowd pleaser!  

*This serves about 4-6 people...
so I would just suggest doubling (or tripling) the recipe if you need more!
Ingredients:
1 package of grape or cherry tomatoes - halved
1/2 large cucumber - peeled and diced
1 15 oz. can of cannellini beans - drained and rinsed
1/3 cup of red onion - chopped
1 1/2 tbsp. of agave nectar
3 tbsp. of extra-virgin olive oil
1 tbsp. of red wine vinegar
1/2 tbsp. of balsamic vinegar
Salt & Pepper (to taste)
1/4 cup of flat leave parsley - chopped

Directions:
1.  Combine all of the ingredients in a large bowl.  
2.  Toss until mixed and coated evenly, and refrigerate for about a half hour until ready to serve!

High five for making it to Friday!

This week was a LONGGGGG one...anyone agree?!?
Forget this week....the entire school year was a LONGGGGGG one!  It was also an extremely intense year...the emotional rollercoaster is still continuing despite it being "over"(long story for another time).  
Thankfully school is officially out for my kids...it's still crazy to me how early the school year ends down here in Florida!  Hopefully I will officially be on summer break sometime after the week of June 17th.  Here are some of my favorite moments from this past week...  
1.  No joke, this is our bed....8 pillows and 1 body pillow.  Two of them are shams though, so they don't really count.  I'm still figuring out how to get comfortable...I think I may be on to something!  Just looking at that pic makes me sleepy!  Zzzz...
2.  I posted this on Wednesday night, the nursery set was delivered last night.  We both LOVE it, this makes it so real!  I keep saying "I can't believe I'm going to put my kid in there"! HA!
3.  We've been chowing down on this yummy sweet tomato salad that I made on Sunday night - all week...recipe coming soon!
4.  This is my FOURTH year seeing the kids off at the bus ramp....I hope everyone has a great summer vacation, and good luck to the 8th graders in High School!!!
5.  Couldn't have made it through without the support of Team Guidance...definitely going to cherish this picture! XO

24 Week Bumpdate

My little lady is the size of an eggplant...that's big!!!
Wow, things are really escalating quickly!
Changes I've noticed:  I'm up 18 lbs....I just KNEW that I was jinxing myself when I said last week that I have steadily been gaining 1 pound per week!

How I've been feeling:  My tummy is really itchy!  Even all of the cocoa butter doesn't seem to be helping much!  I still haven't tried the coconut oil yet, I think it's time for something new though.  The heartburn seems to be starting up again.  It's been the worst when I'm sitting up, and then better when I lay down...isn't it supposed to be the exact opposite?!?

How I've been sleeping:  Overall, I've been sleeping just okay.  Lately it's been really inconsistent...some nights it takes me forever to fall asleep, but then I sleep straight through the night.  Other nights, I fall asleep right away but wake up a million times.  

Food and exercise:  Summer vacation is REALLY close (exactly how close....I'm still not sure).  As soon as things settle down with work, I am definitely getting into a workout routine...AND going to focus more on eating healthy.  In the meantime, I am trying to incorporate exercise where I can, and make better decisions when it comes to food.  I've been eating "Fantastix" at work though, they are just like hot fries....and then wondering why I have heartburn....  

Maternity clothes:  Okay, NOW I'm set!  I made a pit-stop at Motherhood on my way home from the beach this past weekend and bought 2 pairs of shorts, a pair of capri jeans, and I found the CUTEST dress for my shower!  I'm really happy with it!

Movement:  Lots and lots of kicks and punches from my wild little lady!  She has been stepping on my bladder, which is the most interesting feeling...not a fan!  I know I'm in for a lot more discomfort though!  At the beach I put an earbud in my belly button and let her listen to some Justin Timberlake.  From all of her movements, I would say she is a fan!

Best moment this past week:  Preggo bonding with my friend Jaime!  Our moms are best friends, and we grew up together.  She lives a few hours away, and we were able to meet up for lunch and some maternity shopping when I was on my way home from the beach.  It was fun talking about EVERYTHING pregnancy related, and just catching up in general!  She also spoiled Baby Girl with all of these darling goodies...

Secrets of The Mommyhood {Book Review}

Before I get into talking about how much I absolutely loved this book, I just want to say that the author Heather Alexander is a total sweetheart!  She has a blog too!  Her book is all about everything she wished someone had told her about pregnancy, childbirth, and having a baby (quite literally, it says so on the cover).  

When she contacted me asking if I would be interested in reading her book, I first checked it out on Amazon...the reviews rocked, I was excited and of course said "YES Please"!  When the book arrived, I couldn't wait to get home and read it.  Just the cover alone made me happy!
I read most of it when we went away to Vero Beach for our Anniversary weekend.  Stephen is my witness, I LITERALLY laughed out loud several times...and insisted on reading passages to him (to which he found amusing as well).  No joke, it is hilarious!  In addition to being entertaining, I found several very helpful tips, tricks, and lists that I have already referred to more than once!  I used this book as a guide when we started putting together our registry.  I've also learned that passing a baby around is like shaking up a can of soda, and about my inevitable upcoming obsession with Baby Girl's bodily functions!

 The advice in this book is straight from the heart, it felt really personal like she wrote it just for ME!  Thanks Heather for sharing your journey!  I couldn't be more excited to "join the legions of other mom's who eat cold food that is supposed to be hot"!

Perfect Oven Baked Chicken Wings

When you eat chicken wings, do you go for the flats or the drums?  I usually go straight for the flats...luckily Stephen likes the drums (flats too, but they are usually not available)!  Aren't we the best team?  HA!  Just another reason of MANY why things just work!  These chicken wings are cooked to perfection (in my opinion)!  Since we live in an apartment, we have to make the best out of not having a grill.  These wings taste so good baked, I can't even feel bad about being grill-less!
Ingredients:
2 tbsp. of extra-virgin olive oil
Chicken Wings (assorted drums & flats...I made 20)
Salt, Pepper, Garlic Powder
2-3 cups of your favorite BBQ sauce (I used Sticky Fingers, Carolina Classic)
Foil & Cooking Spray

Directions:
1.  In a large bowl, coat wings in olive oil - sprinkle generously with salt, pepper, and garlic powder.
2.  Cover a baking sheet with foil, coat with cooking spray - lay wings out on the sheet.
3.  In a 375 degree oven, cook for 30 minutes - then take them out flip them, and cook for another 15 minutes - take them out to cool for about 5-10 minutes.
4.  In a large bowl, coat the wings with BBQ sauce - lay back out on sheet (may need to spray again) cook for another 15-20 minutes. 
*Serve with extra BBQ sauce, blue cheese, or ranch dipping sauce.

What's cooking this week?

What a weekend! I just got home, I'm unpacked and in my comfy clothes already...feels good! Before I get to the details, I just want to share the few easy meals that are planned for the week...

Monday:  Spicy B.L.T.'s
Tuesday:  White Bean Basil Hummus Chicken Wraps (never quite got around to these last week)
Thursday: Southwest Pasta

We actually took a shortcut tonight and just got Subway...you know I always say even though I love cooking, there is nothing like taking it easy every once in a while!  As relaxing as my weekend was, I am somehow exhausted.  Lots of sunshine will do that to you!  Not only did I get to spend the weekend pool AND beach-side with the girls...I even got to meet up with my fellow preggo friend Jaime and do a little maternity shopping before making the journey back home this afternoon.  The fact that she was able to meet up with me on such short notice, THRILLED me!  So now I am home sweet home with the hubs...we missed him!

Friday means it's almost beach time!

High five for Friday indeed!!!
FIRST of all....HAPPY BIRTHDAY MOM!!!!!!!!!!!!!  I love you, wish I could spend this day with you!!!  XOXO
1.  When hubby reads to Baby Girl, I fall in love with him a little more each time.  She loves hearing the sound of Daddy's voice, I just know it!  We have been building up quite the library for her, I'll have to share some of my favorites with you all!
2.  ALL week I've been listening to the new One Republic album (Native)...over, and over, and....yea, it's pretty awesome!
3.  My Thursday night plans for chicken wraps didn't really pan out for two reasons.  Hubby forgot to defrost chicken, but it was perfect because I didn't feel like cooking anyway.  YES - I sometimes am not in the mood to cook!  It's been a long week, and this lady needed a break!  We found some Florida pizza that we actually like too...score!
4.  My friend Ryan from Sustenance Reinvented posted this quote on Facebook the other night, and I thought it was so perfect for how I've been feeling lately.  I'm trying hard to live in the moment, which is difficult because all I ever think about is September 6th!!!!!!  (I also had fun using the Beautiful Mess app...love it!)
5.  As you can see, "living in the moment" isn't working out so well, because I am SO looking forward to a beachy weekend with my cousins!  I sent this text to them last night, I don't know what Jen thinks we are doing...but my emoji's are definitely more on target!  I'm leaving straight from work, and meeting them halfway at the hotel ON THE BEACH....this is a serious perk to living in the sunshine state only a few hours from two of my favorite girls!  Can't wait to celebrate Jen's graduation, and 21st (omg) birthday!!!

I Get So Emotional Baby!

Sorry, now I have the song in my head too!
If you have been reading my "bumpdates", you know that my emotions have been running high!  No joke, it's been out of control.
Likely I wouldn't handle this well either...
I can't remember the last day that I didn't cry!  I cry over commercials, I cry when I see little girls, I cry when I see moms, I cry about missing family, I cry about work related things, and then there are the silly/most ridiculous things that seem to make me laugh AND cry at the same time.  Let's talk about some of these fine moments...

During the first trimester, I guess when my hormone levels initially started going haywire there was the tea incident.  I started to make a cup of tea, completely forgot about it, and then brushed my teeth.  When Stephen reminded me about the cup of tea on the counter, I immediately broke down, saying that I really wanted the tea...but brushed my teeth and didn't want to have to brush them again.  Quite the dilemma!

Not too long after that, I made the mistake of watching "The Odd Life of Timothy Green".  Spoiler alert....at the end of the movie I just sat there in shock, hysterically screaming "Is he dead?!!?  Is he dead?!?!"  

A few weeks back, I think I mentioned the snack episode!  It all went down like this...
Me:  "Babe, do you have any money?"
Hubby:  "Why?"
Me:  "I discovered a new vending machine at work" 
The INSTANT the words "vending machine" started coming out of my mouth, I broke down in hysterical sobs!  I guess it was because I realized how awful it sounded?  Here I was at the point in my pregnancy where I really started noticing the weight gain...and this "pregnocerous" was OVERJOYED with the fact that I found a vending machine?!?!  (Sidenote...it was a juice vending machine...but still).  AND, I was hitting hubby up for cash!
Well, somehow that whole scene just led to me confessing everything that I had eaten that day...2 pieces of beef jerky that I found in my desk, a bag of cracker jacks (from the student reward drawer), and cheetos (taken from a coworkers children's after school snack stash).  That wasn't even lunch.  I started telling him that maybe if I had some snacks at work, I wouldn't run off on an eating binge!  I was so ashamed.  Poor Stephen didn't even know how to console me.  He just went right into the guest room, and added "snacks" to the dry erase board where we write down things we need to pick up at the store.  Have you ever laugh/cried?  It is the weirdest thing!  I was definitely more upset than amused...but still recognized how irrational I was being!  That Sunday, we stocked up the pantry with a ton of goodies.  Typically we do not keep snacks in the house, but this is what it has come to!

There have been a bunch of ridiculous emotional moments.  Commercials like this are a surefire way to set me off instantly.  The baby...OMG!  Every time I see that part I say "it's going to be the best day EVER!!!"

Now that we are coming up on season finales of TV shows, forget about it!  The Office the other night was intense, and there is still one to go.  

We will be keeping tissues on the coffee table from now on!  It is for the best!
I'm sure I will have plenty more moments just like these to fill you all in on.  It has definitely been an adventure so far!

23 Week Bumpdate

You can't really tell too much by this picture, but she is starting to round out a bit!
Changes I've noticed:  I'm up 16 lbs....I've consistently been going up a pound per week for a while now!  I'm obsessed with cocoa butter, wondering if it is even helping though!  I'm considering using coconut oil as well, has anyone tried this?  Let me know what you think!  I hear good things!
Told yaaaaaaa! 
How I've been feeling:  Still sore and achey, I don't think this is something that will go away anytime soon!  I'm just exhausted, I really think a lot of it has to do with it being the end of the school year.  I'm hoping that as soon as the students are finished (7 more days) there will be a little less pressure.   I am still working for some of the summer break, and even though there is a TON that needs to be done...it will at least be a lot more relaxed!  I'm looking forward to some of the craziness letting up a bit, maybe I won't feel quite as exhausted?  I've also been so emotional, I can't even deal with it...I'll have to share more on that another day!

How I've been sleeping:  Like a baby...enjoying it while I can!!!  I've been having a bunch of weird dreams too!  The most recent one was that my data secretary at work was my midwife!  We had a good laugh over that one!  

Food and exercise:  Thinking maybe I should take this category off of my weekly bumpdates since I never have much to report on.  The only thing I've been doing has just been stretching (better than nothing I guess).  I've been hesitant to use my weights.  About a week ago I pulled out my shoulder, I think that may have had something to do with it.      

Maternity clothes:  This weekend I broke down and bought some dresses at Target (the one in the pic is a new one)!  They are all pretty nice, they seem very baggy but I guess I'll be growing into them!  I am also looking into ordering a dress for my shower in June, hopefully I will order something this week.

Movement:  Every day I look forward to just laying down and feeling baby move!  It is by far the most wonderful experience ever (nothing else I have experienced YET compares).  She is so active, I'm noticing some patterns.  I've even started seeing her little bumps and nudges from the outside.  The other day my phone was on my belly, and lifted right up! 

Best moment this past week:  This weekend when Stephen and I both SAW baby kick....it literally took hours for him to be able to catch it, but was so worth all of the effort!

Black Bean Veggie Quesadillas

Fun fact...I LOVE Mexican food...ALL of it!  I haven't met a Mexican food I didn't like!  Last night, I was talking with Tanika from Growing Gracie about my love of tacos, which reminded me that quesadillas are a close second favorite!  I can't believe I almost forgot to share this with you all!  I made these a few weeks ago, they were perfect with my Fresh Salsa recipe (nice touch, I promise)!  Try them!
Ingredients:
Extra-virgin olive oil - 1 tbsp. (+ olive oil spray...I used my misto)
1/4 onion - chopped
1/2 zucchini - diced
1/2 red bell pepper- diced
1 can black beans - drained and rinsed
1 tsp. of cumin
1 tsp. of chili powder
1/2 tsp. of garlic powder
Salt & pepper (to taste)
1 tsp. of lime juice
2 cups of Monterey Jack cheese - grated
4 large flour (or whole wheat) tortillas
***Serve with salsa, sour cream, and guacamole!!!  

Directions:
1.  Heat 1 tbsp. of olive oil in a large pan at medium high heat, cook onion, zucchini, and red bell pepper until softened (about 5-6 minutes).  
2.  Add beans, seasoning, and lime juice to mixture, continue cooking until beans are heated.
3.  Spray one side of a tortilla with olive oil, flip over, add cheese, and bean/veggie mixture on one half - then fold over.  
4.  Cook 2 in a pan (over medium heat) at a time - when one side is golden brown, flip and cook on other side.
