What's cooking this week?

With the family in town, this weekend was full of lots of eating.  Just as I suspected!  Is it normal to completely plan your day around breakfast, lunch, and dinner?  It is for us, just wondering if this is how it works for everyone else.  Maybe it's part of my whole "plan ahead mentality".  I'm still full... it's hard to even think about food for the week, but of course I'm going to manage!      
Monday:  Buffalo Chicken Wraps
Tuesday:  Blackened Baja Tacos - w/ shrimp this time
Wednesday:  Mustard Chicken Packets over Brown Rice/Quinoa
Thursday:  White Beans with Chicken Sausage & Kale 
Tonight will officially kick off "Operation Cook & Freeze"!  It seems like this is my version of nesting!  My mission is to have as many meals ready to go as possible for when the Little Miss gets here!  I will be making the lasagna tonight in two 8x8 pans (one glass for tonight, and one aluminum to freeze).  Just thinking ahead.  Now I desperately need to make some room in the freezer...I say this all the time but it's still packed!

  1. Yum I love white beans with sausage and kale! I've always wanted to make a bunch of freezer meals to have on hand. Have fun!

  2. We totally plan around meals, esp. when we have visitors. I actually write our dinners on a calender like the school cafeteria :)
    I can't wait to try your recipes!
