Black Bean Veggie Quesadillas

Fun fact...I LOVE Mexican food...ALL of it!  I haven't met a Mexican food I didn't like!  Last night, I was talking with Tanika from Growing Gracie about my love of tacos, which reminded me that quesadillas are a close second favorite!  I can't believe I almost forgot to share this with you all!  I made these a few weeks ago, they were perfect with my Fresh Salsa recipe (nice touch, I promise)!  Try them!
Ingredients:
Extra-virgin olive oil - 1 tbsp. (+ olive oil spray...I used my misto)
1/4 onion - chopped
1/2 zucchini - diced
1/2 red bell pepper- diced
1 can black beans - drained and rinsed
1 tsp. of cumin
1 tsp. of chili powder
1/2 tsp. of garlic powder
Salt & pepper (to taste)
1 tsp. of lime juice
2 cups of Monterey Jack cheese - grated
4 large flour (or whole wheat) tortillas
***Serve with salsa, sour cream, and guacamole!!!  

Directions:
1.  Heat 1 tbsp. of olive oil in a large pan at medium high heat, cook onion, zucchini, and red bell pepper until softened (about 5-6 minutes).  
2.  Add beans, seasoning, and lime juice to mixture, continue cooking until beans are heated.
3.  Spray one side of a tortilla with olive oil, flip over, add cheese, and bean/veggie mixture on one half - then fold over.  
4.  Cook 2 in a pan (over medium heat) at a time - when one side is golden brown, flip and cook on other side.

  1. My husband and I LOVE anything Mexican. We honestly look up mexican restaurants anywhere we go when traveling and have to eat there no matter what the reviews say. We will definitely be giving this a try!
