Minestrone

It seems like I have been cooking up a storm these days, I just have to share this recipe from Laura Vitale! Check out her website, she has a ton of great stuff:

My first attempt to make this soup failed miserably, when I realized that I didn't have any broth, LoL! Luckily second time is a charm! So Yummy! Here is the video:

And here is how mine came out...it's a work of art, and SO DELICIOUS! I will definitely be making this again!
***And in case you don't know what pancetta is....it is an Italian bacon that isn't smoked. You can find it behind the deli counter, just ask them to slice it thick.

  2. mmmmmmmmmmmm your soup looks better than hers - I like the touch of Parmesan cheese - I cannot wait for the weather to cool off so I can make this. You know how your Dad is about eating soup in the summer - LOL! Love, MomSco
