What's cooking this week & Charlie

It's not even 10:00...my meals are planned, AND the shopping list is ready to go!  I feel good!  Now I am ready to continue working on this weekends big project...wedding thank you's!  There is still a long way to go, I have barely made a dent.  I'm excited about this weeks menu (I'm pretty sure I say that every week), I've never attempted making scallops before!  My fingers are crossed that I can pull this off!

Tonight - Cauliflower Rice Paella with Chicken
Monday - Ancho Cherry Rotisserie Chicken (they sell it at Publix) with baked sweet potatoes and corn
TuesdaySeared Scallops with Tuscan Beans over spinach risotto
WednesdayChicken with Honey Orange Sauce and roasted broccoli
Thursday - Blackened Tilapia Baja Tacos
Friday - Mozzarella Roasted Red Pepper Tomato Basil panini with london broil

We have a visitor this weekend, his name is Charlie or as my father calls him "Sir Charles". We are dog-sitting for our friends. Isn't he adorable?!? Love that face! He is the sweetest, and he is being such a good boy for being cooped up in our apartment! I think I am going to take him for another run/walk/pull before getting back into those thank you's!

    I'm sure you don't remember me but I knew you when you were in preschool with my son.. I'm a friend of your moms too! Anyway just wanted you to know how much I enjoy reading your blog! I am a frustrated chef... I'm an avid reader of cookbooks and recipe websites and spend my days creating new ways to feed my troops. You have given me lots of new things to try and maybe even inspired me to plan some menus too. I have accumulated some great recipes that I have tweaked and changed and you are inspiring me to get going and start sharing them. My family and friends have been after me for the longest time to do this so thank you! Keep writing... I love reading !!
