Rise & Shine

Today is off to a great start here at the beach!  Just watched the sunrise from our balcony, while the two sleeping beauties get their rest.  How nice would it be to start your day so peacefully every morning?  Wishing you all a fantastic weekend!  XO

Friday means it's almost beach time!

High five for Friday indeed!!!
FIRST of all....HAPPY BIRTHDAY MOM!!!!!!!!!!!!!  I love you, wish I could spend this day with you!!!  XOXO
1.  When hubby reads to Baby Girl, I fall in love with him a little more each time.  She loves hearing the sound of Daddy's voice, I just know it!  We have been building up quite the library for her, I'll have to share some of my favorites with you all!
2.  ALL week I've been listening to the new One Republic album (Native)...over, and over, and....yea, it's pretty awesome!
3.  My Thursday night plans for chicken wraps didn't really pan out for two reasons.  Hubby forgot to defrost chicken, but it was perfect because I didn't feel like cooking anyway.  YES - I sometimes am not in the mood to cook!  It's been a long week, and this lady needed a break!  We found some Florida pizza that we actually like too...score!
4.  My friend Ryan from Sustenance Reinvented posted this quote on Facebook the other night, and I thought it was so perfect for how I've been feeling lately.  I'm trying hard to live in the moment, which is difficult because all I ever think about is September 6th!!!!!!  (I also had fun using the Beautiful Mess app...love it!)
5.  As you can see, "living in the moment" isn't working out so well, because I am SO looking forward to a beachy weekend with my cousins!  I sent this text to them last night, I don't know what Jen thinks we are doing...but my emoji's are definitely more on target!  I'm leaving straight from work, and meeting them halfway at the hotel ON THE BEACH....this is a serious perk to living in the sunshine state only a few hours from two of my favorite girls!  Can't wait to celebrate Jen's graduation, and 21st (omg) birthday!!!

I Get So Emotional Baby!

If you have been reading my "bumpdates", you know that my emotions have been running high!  No joke, it's been out of control.
Likely I wouldn't handle this well either...
I can't remember the last day that I didn't cry!  I cry over commercials, I cry when I see little girls, I cry when I see moms, I cry about missing family, I cry about work related things, and then there are the silly/most ridiculous things that seem to make me laugh AND cry at the same time.  Let's talk about some of these fine moments...

During the first trimester, I guess when my hormone levels initially started going haywire there was the tea incident.  I started to make a cup of tea, completely forgot about it, and then brushed my teeth.  When Stephen reminded me about the cup of tea on the counter, I immediately broke down, saying that I really wanted the tea...but brushed my teeth and didn't want to have to brush them again.  Quite the dilemma!

Not too long after that, I made the mistake of watching "The Odd Life of Timothy Green".  Spoiler alert....at the end of the movie I just sat there in shock, hysterically screaming "Is he dead?!!?  Is he dead?!?!"  

A few weeks back, I think I mentioned the snack episode!  It all went down like this...
Me:  "Babe, do you have any money?"
Hubby:  "Why?"
Me:  "I discovered a new vending machine at work" 
The INSTANT the words "vending machine" started coming out of my mouth, I broke down in hysterical sobs!  I guess it was because I realized how awful it sounded?  Here I was at the point in my pregnancy where I really started noticing the weight gain...and this "pregnocerous" was OVERJOYED with the fact that I found a vending machine?!?!  (Sidenote...it was a juice vending machine...but still).  AND, I was hitting hubby up for cash!
Well, somehow that whole scene just led to me confessing everything that I had eaten that day...2 pieces of beef jerky that I found in my desk, a bag of cracker jacks (from the student reward drawer), and cheetos (taken from a coworkers children's after school snack stash).  That wasn't even lunch.  I started telling him that maybe if I had some snacks at work, I wouldn't run off on an eating binge!  I was so ashamed.  Poor Stephen didn't even know how to console me.  He just went right into the guest room, and added "snacks" to the dry erase board where we write down things we need to pick up at the store.  Have you ever laugh/cried?  It is the weirdest thing!  I was definitely more upset than amused...but still recognized how irrational I was being!  That Sunday, we stocked up the pantry with a ton of goodies.  Typically we do not keep snacks in the house, but this is what it has come to!

There have been a bunch of ridiculous emotional moments.  Commercials like this are a surefire way to set me off instantly.  The baby...OMG!  Every time I see that part I say "it's going to be the best day EVER!!!"

Now that we are coming up on season finales of TV shows, forget about it!  The Office the other night was intense, and there is still one to go.  

We will be keeping tissues on the coffee table from now on!  It is for the best!
I'm sure I will have plenty more moments just like these to fill you all in on.  It has definitely been an adventure so far!

23 Week Bumpdate

You can't really tell too much by this picture, but she is starting to round out a bit!
Changes I've noticed:  I'm up 16 lbs....I've consistently been going up a pound per week for a while now!  I'm obsessed with cocoa butter, wondering if it is even helping though!  I'm considering using coconut oil as well, has anyone tried this?  Let me know what you think!  I hear good things!
Told yaaaaaaa! 
How I've been feeling:  Still sore and achey, I don't think this is something that will go away anytime soon!  I'm just exhausted, I really think a lot of it has to do with it being the end of the school year.  I'm hoping that as soon as the students are finished (7 more days) there will be a little less pressure.   I am still working for some of the summer break, and even though there is a TON that needs to be done...it will at least be a lot more relaxed!  I'm looking forward to some of the craziness letting up a bit, maybe I won't feel quite as exhausted?  I've also been so emotional, I can't even deal with it...I'll have to share more on that another day!

How I've been sleeping:  Like a baby...enjoying it while I can!!!  I've been having a bunch of weird dreams too!  The most recent one was that my data secretary at work was my midwife!  We had a good laugh over that one!  

Food and exercise:  Thinking maybe I should take this category off of my weekly bumpdates since I never have much to report on.  The only thing I've been doing has just been stretching (better than nothing I guess).  I've been hesitant to use my weights.  About a week ago I pulled out my shoulder, I think that may have had something to do with it.      

Maternity clothes:  This weekend I broke down and bought some dresses at Target (the one in the pic is a new one)!  They are all pretty nice, they seem very baggy but I guess I'll be growing into them!  I am also looking into ordering a dress for my shower in June, hopefully I will order something this week.

Movement:  Every day I look forward to just laying down and feeling baby move!  It is by far the most wonderful experience ever (nothing else I have experienced YET compares).  She is so active, I'm noticing some patterns.  I've even started seeing her little bumps and nudges from the outside.  The other day my phone was on my belly, and lifted right up! 

Best moment this past week:  This weekend when Stephen and I both SAW baby kick....it literally took hours for him to be able to catch it, but was so worth all of the effort!

Black Bean Veggie Quesadillas

Fun fact...I LOVE Mexican food...ALL of it!  I haven't met a Mexican food I didn't like!  Last night, I was talking with Tanika from Growing Gracie about my love of tacos, which reminded me that quesadillas are a close second favorite!  I can't believe I almost forgot to share this with you all!  I made these a few weeks ago, they were perfect with my Fresh Salsa recipe (nice touch, I promise)!  Try them!
Ingredients:
Extra-virgin olive oil - 1 tbsp. (+ olive oil spray...I used my misto)
1/4 onion - chopped
1/2 zucchini - diced
1/2 red bell pepper- diced
1 can black beans - drained and rinsed
1 tsp. of cumin
1 tsp. of chili powder
1/2 tsp. of garlic powder
Salt & pepper (to taste)
1 tsp. of lime juice
2 cups of Monterey Jack cheese - grated
4 large flour (or whole wheat) tortillas
***Serve with salsa, sour cream, and guacamole!!!  

Directions:
1.  Heat 1 tbsp. of olive oil in a large pan at medium high heat, cook onion, zucchini, and red bell pepper until softened (about 5-6 minutes).  
2.  Add beans, seasoning, and lime juice to mixture, continue cooking until beans are heated.
3.  Spray one side of a tortilla with olive oil, flip over, add cheese, and bean/veggie mixture on one half - then fold over.  
4.  Cook 2 in a pan (over medium heat) at a time - when one side is golden brown, flip and cook on other side.
